It's getting warmer here in Austin! The flowers and trees are blooming. Everything feels and looks so pretty and clean because it's been raining lately. Mother Earth knows how to grow things and keep the air clean. "April Showers bring May Flowers". Enjoy the beautiful weather with family and friends. It's the perfect time to enjoy great food. Squash Casserole

7 yellow squash, sliced 1/4 cup milk 1/2 cup butter, sliced 2 eggs, beaten 1 bunch green onions, tops thinly sliced salt & pepper to taste 3 tablespoons white sugar 1 cup shredded Cheddar cheese 2 cups crushed buttery crackers 1. Preheat oven to350 degrees F (175 degrees C) 2. Bring a large pot of water to a boil. Add squash and cook until tender but still firm, about 15 minutes; drain. 3. To the squash, add milk, butter, eggs, green onion tops, salt, pepper, and sugar; mix well. Transfer to a 9 x 13 inch casserole dish. Sprinkle with cheese and crushed crackers. 4. Bake in preheated oven for 30 minutes --Thomas Harper

Perfect Baked Potato

1 medium baking potato 1 teaspoon olive oil 1/2 teaspoon salt 2 teaspoons butter 1 pinch freshly ground black pepper 1/4 cup shredded Cheddar cheese 1. Preheat the oven to 300 degrees F (150 degrees C). Scrub the potato and pierce the skin several times with a knife or fork. Rub the skin with olive oil, then with salt. 2. Place the potato in the preheated oven and bake for minutes, or until slightly soft and golden brown. Slice the potato down the center and serve with butter and black pepper. If desired, sprinkle shredded Cheddar cheese over the top. --Thomas Harper,
